Salad Preparation
Roast the Garlic
Preheat the oven to 400°F (200°C). Wrap a whole head of garlic in aluminum foil with a drizzle of olive oil. Roast for 30-35 minutes until soft. Let cool, then squeeze the cloves out of the skins.
Prepare the Dressing
In a blender, combine the roasted garlic, 1/4 cup of olive oil, 2 tablespoons of lemon juice, 2 tablespoons of Dijon mustard, and salt & pepper to taste. Blend until smooth.
Mix the Salad
In a large bowl, combine the chopped kale, cherry tomatoes, diced cucumber, and half of the grated Parmesan cheese. Drizzle the dressing over the salad and toss to coat.
Serve
Top the salad with the remaining Parmesan cheese and croutons. Serve immediately.
