Brew coffee

Brew 2 cups of very strong coffee (use espresso or a concentrated pour-over). If using instant coffee, dissolve 2–3 tsp in 1/2 cup boiling water instead. Let the brewed coffee cool slightly (5–10 minutes) so it doesn't curdle the milk when combined.

Citrus & Fruit Syrup

Make citrus-pineapple syrup

In a small saucepan combine 1/4 cup granulated sugar, 1/4 cup fresh orange juice, 1 tbsp lime juice, 1 tbsp lemon juice, 1 tsp orange zest and 2 tbsp pineapple jam or puree. Warm over medium-low heat, stirring until the sugar and jam dissolve and the mixture thickens slightly (about 3–5 minutes). Taste and adjust acidity or sweetness. Remove from heat and let cool to room temperature.

If you prefer a smoother syrup, strain the mixture through a fine-mesh sieve to remove zest bits and pineapple fibers. Reserve syrup.

Milk & Flavoring

Prepare milk blend

In a separate small saucepan or microwave-safe container, gently warm 1 cup milk and 1/4 cup light cream (or use 1 1/4 cups coconut milk for dairy-free) until steaming but not boiling (about 1–2 minutes). Whisk in 1/2 tsp vanilla extract and 1/4 tsp ground cinnamon until incorporated. Chill briefly if you want a cold beverage, or cool to lukewarm before combining with cooled coffee.

For a frothier texture, froth the milk mixture with a handheld frother or by shaking in a sealed jar for 30 seconds, then pour into the drink.

Assembly

Combine components

In a large pitcher or individual serving glass, add the cooled brewed coffee. Stir in 2–3 tablespoons of the prepared citrus-pineapple syrup (adjust to taste) and 1 tablespoon simple syrup or honey. Stir until fully combined.

Add 1 cup of iced cubes to each serving glass (or add to the pitcher). Pour the milk blend over the coffee mixture slowly to create a layered effect if desired.

Taste and adjust sweetness or citrus balance by adding more syrup, honey, or a squeeze of lime. If serving hot, omit ice and serve warmed.

Garnish & Serve

Garnish each glass with an orange slice or twist and a sprinkle of toasted coconut flakes. Optionally dust a tiny pinch of cinnamon over the top.
