Brew

Brew 2 cups of strong black coffee. Use espresso, a Moka pot, or a tightly packed French press. The finished drink benefits from concentrated, hot coffee; target a temperature of about 85–90°C (185–195°F) if possible.

While the coffee brews, warm the serving vessel(s) by rinsing them with hot water and discarding the water. This helps maintain the drink temperature.

Sweeten & Spike

Place 1 tablespoon demerara or brown sugar into a heatproof measure or individual warmed cups. Pour about 2–3 tablespoons of the hot coffee over the sugar and stir until fully dissolved to make a syrup. This ensures even sweetness and avoids graininess.

Add 2 tablespoons dark rum (or Cognac) to the sweetened coffee. If using coffee liqueur, reduce rum to 1 tablespoon and add 1 tablespoon coffee liqueur instead. Stir to combine.

Stir in 1 teaspoon vanilla extract and optional 1/2 teaspoon orange zest at this stage to lift aromatics. Taste and adjust sweetness or spirit level to preference.

Finish with Cream & Garnish

Lightly whip 1/2 cup heavy cream until it reaches soft peaks — the cream should be pourable but hold a gentle mound. Do not over-whip; you want a silky layer that will float.

Pour the sweetened, spiked coffee into the warmed serving cups, leaving about 1/2–3/4 inch (1–2 cm) headspace for the cream layer.

Carefully float the whipped cream on top by spooning it over the back of a spoon held just above the coffee surface so the cream spreads and forms a distinct layer.

Lightly dust the cream with 1/4 teaspoon freshly grated nutmeg or a sprinkle of cocoa powder. If desired, finish with a small twist of orange zest on top.

Serve immediately while the coffee is hot and the cream layer is cold—drink through the cream or spoon the cream and sip the coffee beneath.
