Grapefruit Granita

Make simple base

In a small saucepan, combine granulated sugar and water over medium heat. Stir until sugar fully dissolves and the mixture just comes to a simmer, about 2–3 minutes. Remove from heat and cool 5 minutes.

In a heatproof bowl, stir the grapefruit juice, cooled sugar syrup, lime juice, and grated grapefruit zest until evenly combined. Taste and adjust sweetness (add up to 1 tbsp more sugar dissolved into a little warm water if required).

Pour the mixture into a shallow metal or glass pan (an 8x8 or similar). Place uncovered in the freezer. After 30–45 minutes, scrape the partially frozen mixture with a fork to create flaky ice crystals. Repeat scraping every 30 minutes for 2–3 cycles until you have a light, granular texture (about 2–3 hours total). When the granita is fully crystalline and fluffy, transfer to an airtight container and keep in the freezer until service (it will be scoopable but firm).

Champagne Mignonette

Prepare mignonette

Combine the champagne vinegar (or reduced champagne), minced shallot, minced chives, olive oil, sea salt, and black pepper in a small bowl. Stir and let rest for at least 15–20 minutes at cool room temperature to allow flavors to meld. Taste and adjust seasoning — the shallot should be present but not sharp.

Pink Peppercorn Garnish

Lightly crush the pink peppercorns with the flat side of a chef's knife or in a mortar and pestle until you have mostly cracked pieces (not powdered). This releases aroma and gives a delicate floral, peppery finish. Keep some whole for visual contrast if desired.

Shucking and Assembly

Keep oysters cold until ready to serve. Put crushed ice in a shallow serving platter or across multiple plates to form a stable bed. Arrange oysters on the half shell on the ice, flat side up to keep liquor from spilling.

Using an oyster knife, hold an oyster flat-side up, insert knife at the hinge, twist to pop open, slide blade under the top shell to sever the adductor muscle and remove top shell. Run blade under oyster meat to sever muscle on the bottom shell so the oyster sits free in its shell but retains its liquor. Repeat for all oysters.

Right before serving, place a small spoonful (about 1/2 to 3/4 teaspoon) of grapefruit granita atop each oyster — the granita should be frozen and flaky; if it's too hard, let it soften 2–3 minutes at cool room temperature or break up with a fork. The granita provides cold bright citrus contrast to the oyster brine.

Using a very small spoon, drizzle approximately 1/2 teaspoon of champagne mignonette over the granita on each oyster (or serve mignonette on the side in a small bowl so guests can add to taste). Do not over-saturate so the granita and oyster liquor remain distinct.

Sprinkle a tiny pinch (a few cracked pieces) of crushed pink peppercorns over each oyster. If desired, lightly dust with a few grains of coarse sea salt for texture, but use sparingly to avoid over-salting.

Garnish the platter with lemon wedges and a few extra sprigs of chives if desired. Serve immediately so granita remains chilled and oysters are fresh.
