Beat eggs
Crack 3 large eggs into a medium bowl. Add 2 tablespoons cold whole milk, 1 teaspoon fine sea salt and 1/4 teaspoon freshly ground black pepper. Whisk briskly until uniformly combined and slightly frothy (about 20–30 seconds). Strain the eggs through a fine sieve into a second bowl to remove chalazae and ensure a silky texture (optional but recommended).

Preheat pan
Place a 8–9 inch nonstick or well-seasoned omelette pan over medium-low heat. Add 1 tablespoon unsalted butter and let it melt, swirling to coat the surface. The butter should foam gently but not brown; target surface temperature is low enough that butter foams steadily (about 275–300°F / 135–149°C if using an infrared thermometer).

Cook eggs gently
Pour the strained egg mixture into the pan. After 10–15 seconds, as edges begin to set, use a silicone spatula to gently pull the set edges toward the center while tilting the pan so uncooked eggs flow to the edges. Repeat this motion until eggs are mostly set but still slightly glossy and custardy on top (about 1.5–2 minutes total). Do not let the bottom brown.

Prepare filling
While the eggs are setting, in a small bowl combine 3 tablespoons mascarpone and 3 tablespoons well-drained ricotta. Add 1 tablespoon finely snipped fresh chives, 1/2 teaspoon lemon zest, 1/2 teaspoon fresh lemon juice, 1/8 teaspoon fine sea salt, and 1/8 teaspoon freshly ground white pepper (optional). Stir until smooth and lightly whipped — the mixture should be spreadable but not runny.

Add filling to omelette
When the omelette surface is just set but still slightly glossy, spoon the cheese mixture in a line across one half of the omelette (leaving about 1/2 inch border at the edge). Smooth the filling to an even layer about 1/4 inch thick.

Fold omelette
Using the spatula, carefully lift the opposite free edge of the omelette and fold it over the filled half to form a half-moon. Hold the pan off the heat for 10–15 seconds to let residual heat finish the cheese warming without melting it completely; the interior should be warm and creamy, not hot and runny.

Plate and top with caviar
Slide the folded omelette gently onto a warm plate. Using a small spoon, place 1 ounce of fresh Kentucky paddlefish caviar in a small quenelle or spoonful on top of the omelette near the fold. Do not push caviar into the hot interior — it should sit on top so its delicate texture and flavor remain intact.

Finish and serve
Scatter 1 teaspoon micro chives or extra snipped chives over the caviar and around the omelette. Add 2 thin lemon slices or twists to the plate for optional squeezing. Serve immediately with 2 slices of crisp toasted brioche or melba toast on the side so diners can taste caviar on toast with the creamy omelette.
