For the Lemon Emulsion

For the Mashed Potatoes

Method

Grilling the Salmon

1

Prepare the Salmon

Preheat the grill to medium-high heat. Rub the salmon fillets with olive oil, salt, and black pepper. Squeeze fresh lemon juice over the fillets.

2

Grill the Salmon

Place the salmon on the grill, skin-side down. Grill for about 6-8 minutes per side, or until cooked through and flakey.

Making the Lemon Emulsion

3

Combine Ingredients

In a bowl, whisk together egg yolks and lemon juice until smooth.

4

Create Emulsion

Slowly drizzle in the olive oil while whisking continuously until the mixture thickens. Season with salt and white pepper to taste.

Preparing the Mashed Potatoes

5

Cook the Potatoes

Peel and chop the potatoes into chunks. Boil in salted water until tender, about 15-20 minutes.

6

Mash the Potatoes

Drain the potatoes and return them to the pot. Add butter and heavy cream, then mash until smooth. Season with salt and black pepper to taste.

Plating

7

Serve the Dish

On each plate, place a generous scoop of mashed potatoes, top with the grilled salmon, and drizzle the lemon emulsion over the top.
