Prepare the Ingredients

Chop the pancetta into small pieces, slice the mushrooms, and mince the garlic.

Cook the Pasta

In a large pot, bring salted water to a boil. Add the pappardelle and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta.

Sauté Pancetta and Mushrooms

In a large skillet over medium heat, add olive oil. Once hot, add the pancetta and cook until crispy. Then add the mushrooms and garlic, cooking until the mushrooms are tender.

Combine Pasta and Sauce

Add the cooked pappardelle to the skillet. Toss everything together, adding reserved pasta water a little at a time to create a sauce. Season with salt and black pepper.

Finish and Serve

Stir in the pine nuts and grated Parmesan cheese. Remove from heat, garnish with fresh parsley, and serve immediately.
