Preparing the Mussels

Clean the Mussels

Rinse the mussels under cold water, scrubbing the shells to remove any debris. Remove the beards if present.

Sauté Aromatics

In a large pot, heat olive oil over medium heat. Add shallots and garlic, sautéing until translucent.

Add Liquids

Pour in the white wine and pastis, bringing to a simmer.

Cook Mussels

Add the cleaned mussels to the pot, cover, and steam for about 5-7 minutes until the mussels have opened. Discard any that remain closed.

Finish the Broth

Stir in the heavy cream, chopped parsley, salt, and pepper. Let it simmer for another 2-3 minutes.

Preheat Oil

In a deep pot, heat vegetable oil to 350°F (175°C).

Fry the Potatoes

Fry the cut potatoes in batches until golden brown and crispy, about 4-5 minutes per batch.

Drain and Season

Remove fries from oil and drain on paper towels. Season with salt while still hot.
