Prepare the Ingredients

Chop the onion and red bell pepper, mince the garlic, and clean the mussels and shrimp.

Cook Chorizo and Cod

In a large paella pan or skillet, heat olive oil over medium heat. Add the chopped chorizo and cook until browned. Then, add the salted cod and cook for an additional 3-4 minutes.

Add Vegetables

Stir in the onion, garlic, and red bell pepper. Cook until the vegetables are softened, about 5 minutes.

Add Rice and Broth

Add the paella rice to the pan, stirring to coat. Pour in the chicken broth, add saffron, and bring to a simmer.

Cook the Paella

Let it simmer without stirring for about 15 minutes, or until the rice is nearly cooked.

Add Seafood

Carefully place the shrimp and mussels on top of the rice. Cover the pan and cook for another 5-7 minutes, or until the mussels have opened and shrimp are cooked through.

Finish and Serve

Remove from heat, let it sit covered for 5 minutes. Serve with lemon wedges on the side.
