Prepare the Base

In a large skillet or paella pan, heat the olive oil over medium heat. Add the sliced chorizo and cook for about 3-4 minutes until it begins to brown.

Add Vegetables

Stir in the chopped onion, garlic, and red bell pepper. Cook for another 5 minutes until the onion is translucent.

Add Rice and Spices

Add the rice, paprika, saffron, salt, and black pepper to the pan. Stir well to coat the rice with the oil and spices.

Add Broth

Pour in the chicken broth and bring the mixture to a boil. Reduce the heat and simmer for about 10 minutes.

Add Seafood

Gently fold in the cod chunks, shrimp, and mussels. Sprinkle the green peas on top. Cover the pan and cook for another 10-15 minutes until the seafood is cooked and the rice has absorbed the liquid.

Serve

Once cooked, remove from heat and let it sit for 5 minutes. Serve hot, garnished with lemon wedges if desired.
