Method

Burger

  1. 1

    Form the patty

Gently shape the ground beef into a 4-inch diameter patty about 3/4 inch thick, handling it as little as possible. Make a shallow 1/2-inch-wide dimple in the center with your thumb to reduce puffing while cooking. Season both sides evenly with kosher salt and freshly ground black pepper.

  2. 2

    Cook the bacon

Place a small skillet over medium heat. Add the bacon slice and cook until crisp and browned, about 5–7 minutes, turning once. When done, transfer to a paper towel-lined plate to drain and keep warm. Reserve a little bacon fat in the pan (about 1 tsp) and discard the rest or wipe out if too much remains.

  3. 3

    Cook the patty

Heat a heavy skillet or cast-iron pan over medium-high heat until very hot (about 3–4 minutes). Add 1 tsp butter and swirl to coat. Place the seasoned patty in the pan and cook without moving for 3 minutes. Flip the patty and cook 2 minutes on the second side for medium (adjust 1–2 minutes for desired doneness). During the last 30–45 seconds of cooking, place the cheddar slice on top of the patty and cover the pan briefly or use a metal bowl to help the cheese melt.

  4. 4

    Rest the patty

Remove the cheeseburger patty to a plate and let rest for 2 minutes. Resting helps redistribute juices and keeps the bun from getting soggy when assembled.

Bun & Finish

  1. 5

    Toast the bun

While the patty rests, wipe the skillet if needed and return to medium heat. Spread mayonnaise on the cut sides of the bun. Add the butter to the skillet and place the cut buns butter-side down. Toast until golden and lightly crisp, about 1–2 minutes.

  2. 6

    Assemble the burger

Spread the mustard on the bottom bun. Place the lettuce leaf, tomato slices, and dill pickles on the bottom bun. Set the rested cheeseburger patty on top of the pickles, then lay the cooked bacon slice over the cheese. Cap with the top bun.

  3. 7

    Serve

Transfer the Single Bacon Hamburger to a plate and serve immediately while hot. Offer ketchup or extra condiments on the side if desired.
