    Prepare the meat

    Place 1 lb ground beef in a bowl. Sprinkle with 1 tsp kosher salt, 1/2 tsp black pepper and 1 tsp Worcestershire sauce (if using). Gently fold the seasonings into the meat with a fork or your hands just until combined; avoid overworking to keep patties tender.

    Divide and form

    Divide the seasoned beef into 8 equal portions (about 2 oz each). Roll each portion lightly into a ball, then press into a flat round about 2 1/4 inches in diameter and roughly 1/2 inch thick. Make a slight dimple in the center of each patty with your thumb to prevent doming while cooking.

    Cook the patties

    Heat a large skillet or griddle over medium-high heat and add 1 tablespoon neutral oil, swirling to coat. When the pan is hot and slightly shimmering, place patties into the pan leaving a little space between them. Cook for 2 to 3 minutes without moving until a brown crust forms on the bottom. Flip and cook another 1.5 to 2 minutes for medium (adjust time for desired doneness). During the last 30–45 seconds of cooking, place a small piece of cheddar or American cheese on each patty, cover the pan with a lid for 30 seconds to melt the cheese.

    Rest patties

    Transfer cooked patties to a plate and tent loosely with foil for 2 minutes while you prepare buns and toppings. This helps redistribute juices.

    Prepare buns

    Split 8 mini buns. Spread a thin layer of softened butter on the cut faces of each top and bottom bun (about 2 tablespoons total).

    Toast buns

    Return the same skillet or griddle to medium heat. Place buttered cut-side down and toast for 30–60 seconds until golden and crisp. Remove and keep warm.

    Assemble condiments

    On the bottom half of each toasted bun, spread about 1/4 teaspoon mustard and 1/4 teaspoon ketchup (adjust to taste). Place a lettuce leaf on the sauce, then a cheese-topped patty. Add a single pickle slice, a thin tomato slice (cut the 1/2 tomato into 8 thin rounds), and a couple of very thin red onion rings. Cap with the top bun.

    Secure and serve

    If desired, insert a toothpick through each mini burger to hold layers in place. Arrange on a platter and serve immediately with fries or chips.
