Bacon-Wrapped Mini Patties

    Prepare the meat

    Place the ground beef in a bowl. Sprinkle in the salt, black pepper, Worcestershire sauce, garlic powder, and onion powder. Gently mix with your hands or a fork until just combined — avoid overworking to keep patties tender.

    Portion patties

    Divide the seasoned beef into 8 equal portions (about 2 ounces / 55 g each). Lightly roll each portion into a compact ball and then flatten to a patty roughly the diameter of the mini buns, about 2.5–3 inches across and about 1/2 inch thick. Make a slight dimple in the center of each patty with your thumb to prevent doming while cooking.

    Wrap with bacon

    Cut each bacon slice in half crosswise. Wrap one half-slice of bacon around the edge of each patty, overlapping the ends slightly on the underside. If bacon is too long, tuck the ends under the patty and press to adhere. The bacon should circle the patty perimeter, leaving the top and bottom exposed.

    Sear and finish

    Heat a large skillet or cast-iron pan over medium-high heat and add 1 tablespoon neutral oil. When the pan is hot and oil shimmers, place patties bacon-side down first so the bacon begins to crisp and render fat. Cook undisturbed 2–3 minutes until bacon is browned, then flip carefully. Reduce heat to medium and continue cooking another 2–3 minutes, flipping once more if needed, until internal temperature reaches 160°F (71°C) and bacon is crisp. If bacon is browning faster than meat cooks, lower heat, cover pan loosely and finish cooking for 2–4 minutes. For extra even cooking, finish in a 375°F (190°C) oven for 4–6 minutes after searing (optional).

    Melt cheese

    About 1 minute before removing patties from heat, place a small piece of cheese (halve each slice so you have 8 small pieces) on each patty. Cover pan or tent with foil briefly to melt the cheese, about 30–60 seconds.

    Rest patties

    Transfer cooked patties to a plate and let rest 2–3 minutes so juices redistribute.

Toppings & Buns

    Toast buns: Spread butter on cut sides of the mini buns. In a separate clean skillet or in the oven on a sheet pan, toast the buns butter-side down over medium heat until golden and slightly crisp, about 1–2 minutes, or in a 375°F (190°C) oven for 3–4 minutes.

    Prepare toppings: While patties cook, arrange pickle slices, thinly sliced red onion, and torn lettuce so assembly is quick. If using cheese slices, slice each cheese slice in half to make 8 small pieces.

Condiments & Assembly

    Mix condiments (optional): For a simple spread, combine mayonnaise, ketchup, and mustard in a small bowl and stir until smooth. Adjust amounts to taste.

    Assemble sliders: Spread a thin layer of the condiment mixture (or individual ketchup/mustard/mayo) on both top and bottom buns. Place a leaf of lettuce (if using) on the bottom half, add a bacon-wrapped mini patty with melted cheese, top with a pickle slice and a few rings of red onion, then crown with the bun top.
