Burger Patties

Form and season patties
Divide the ground beef into two equal portions (about 8 oz each). Gently form into patties about 3/4-inch thick and slightly wider than the buns, making a shallow dimple in the center of each patty with your thumb to prevent doming. Season both sides evenly with kosher salt and freshly ground black pepper and brush both sides lightly with Worcestershire sauce.

Cook patties
Heat a cast-iron skillet or grill over medium-high heat until very hot. Add 1 tsp vegetable oil to the skillet (or oil the grill grates). Cook the patties 3–4 minutes on the first side without moving until a brown crust forms. Flip and cook another 2–3 minutes for medium (adjust time for desired doneness). During the last minute of cooking, place a slice of cheddar on each patty to melt. Remove patties to a warm plate and let rest 3–4 minutes.

Make sauce
In a small bowl, combine the crumbled blue cheese, mayonnaise, sour cream, and 2 tablespoons buttermilk. Stir until mostly smooth with some small blue cheese chunks remaining for texture. Add the lemon juice, minced garlic, chopped chives, salt, and black pepper. Taste and thin with up to an additional 1–2 tablespoons buttermilk if you prefer a looser sauce. Chill while you finish the other components so flavors meld.

Caramelize onions
While bacon is cooking (or in a separate pan), slice the yellow onion into 1/4-inch rings. Heat 1 tablespoon unsalted butter and 1 tsp olive oil in a skillet over medium-low to medium heat. Add the onion rings and a pinch of salt and the optional 1/2 tsp brown sugar. Cook, stirring occasionally, until soft and deeply golden brown, about 12–18 minutes. Raise heat slightly at the end if necessary to achieve some browning, but do not burn. Remove from heat and keep warm.

Assemble burgers
On the bottom bun, place a lettuce leaf and a tomato slice to protect the bun from moisture. Add the cheesed burger patty, then 2 slices of crisp bacon (arranged crosswise if desired), a generous spoonful (about 2–3 tablespoons) of the blue cheese sauce, and a generous portion of the grilled onions. Top with the top bun. Serve immediately with extra blue cheese sauce on the side.
