Rinse and stem
Place the fresh red (and black, if using) currants in a large bowl of cold water. Swirl gently to remove debris. Drain and spread on a clean kitchen towel. Remove stems by pinching each small cluster and sliding berries off the stems; discard stems.
Combine with sugar
Transfer stemmed currants to a medium mixing bowl. Sprinkle the granulated sugar evenly over the berries. Add the lemon juice and the 2 tablespoons of water. Gently toss with a spoon so sugar coats the berries and lemon juice is distributed.
Macerate
Let the sugared currants sit at room temperature for 20–30 minutes, stirring once or twice. As they macerate, the fruit will release juices and the sugar will begin to dissolve, creating a bright syrup.
Adjust sweetness and texture
Taste the currants after macerating. If you prefer sweeter or more saucy fruit, stir in up to 1–2 additional tablespoons sugar and let sit another 10 minutes. If berries are too tart, a pinch more sugar will balance them. For a smoother sauce, lightly mash half the berries with the back of a spoon or pulse briefly in a food processor (use short bursts to avoid pulverizing seeds).

Spoon the macerated currants over individual portions of plain yogurt or crème fraîche (about 1/4 cup each) if using. The tang of the dairy complements the bright currant flavor.
Garnish and zest
Finish with a light scattering of lemon zest and a mint leaf per serving for color and freshness.
Storage: Transfer leftover currants and their syrup to an airtight container and refrigerate for up to 4–5 days. Use as a topping for toast, pancakes, oatmeal, or stirred into smoothies.
