Prepare crème fraîche and seasoning
Place crème fraîche in a small bowl. Add 1/4 tsp sea salt and 1/8 tsp freshly ground black pepper. Stir gently to combine and taste; adjust seasoning lightly. Keep chilled.
Sieve egg components
Using a fine mesh sieve set over separate small bowls, press the measured egg whites through to remove any membrane or bubbles until you have 3 tbsp of smooth sieved whites. Repeat with the yolks until you have 3 tbsp of sieved yolk. Cover and keep chilled until service.
Prepare shallots and chives
Very finely mince the shallot and place it in its own small serving bowl. Snip chives into very thin 1/8-inch pieces and place in a separate small bowl. Keep both chilled.
Lemon
Cut half a lemon and place on the service board for guests to squeeze lightly over blini or crème fraîche if desired.
Plate caviar for service
Right before serving, place the caviar tin or jar on a small bowl half-filled with ice (or a chilled serving dish). Use a mother-of-pearl or non-metal spoon to transfer the caviar into a small serving bowl(s). Keep covered and chilled until ready to serve to maintain texture and temperature.
Blinis
Bloom yeast
In a small bowl combine warmed milk (about 100–110°F / 38–43°C) with 1 tsp sugar and 1/2 tsp active dry yeast. Stir gently and let sit 5–7 minutes until foamy.
Make batter
In a mixing bowl whisk together 1 cup all-purpose flour and 1/4 tsp salt. Whisk in the foamy milk-yeast mixture, 1 large egg, and 2 tbsp melted butter until smooth. The batter should be the consistency of thick pancake batter. Cover and let rest 30 minutes at room temperature to develop lightness.
Cook blinis
Heat a nonstick skillet over medium-low heat and brush lightly with neutral oil or butter. Use a tablespoon measure to drop ~1 tbsp portions of batter (about 2-inch rounds) into the pan, leaving space between. Cook 1.5–2 minutes until small bubbles form on the surface and edges set, then flip and cook 45–60 seconds until golden. Adjust heat as needed so they cook through without burning. Transfer to a wire rack and keep warm in a low oven (200°F / 95°C) while you finish cooking the batch. Yield: about 24–28 small blinis.
Service & Assembly
To serve each portion: place 2–3 warm blinis on a small plate or service board. Using a small spoon, spread a thin dollop (about 1/2 tsp) of crème fraîche on each blini. Add a small quenelle or dot (about 1/2 tsp) of sieved egg yolk and a smaller dot (about 1/4–1/2 tsp) of sieved egg white next to it. Sprinkle a few minced shallot pieces and 3–4 snipped chives on top or alongside. Using the mother-of-pearl spoon, add 1/2 to 1 tsp of Osetra caviar on top of each prepared blini. Finish with a tiny squeeze of lemon if desired.
Presentation notes: Keep caviar chilled and covered until the moment it is spooned. Serve immediately after assembly so blinis remain warm and caviar retains its briny pop. Provide extra bowls of garnishes so guests can customize their bites.
