Mochi Ice Cream Directions
1. Prepare Mochi Dough
In a microwave-safe bowl, combine sweet rice flour and sugar. Gradually add water and stir until smooth. Cover the bowl with plastic wrap.
2. Cook the Mochi
Microwave the mixture on high for 1 minute. Stir, then microwave for another minute. Stir again and microwave for a final 30 seconds until the dough is thick and translucent.
3. Dust and Shape
Dust a clean surface with cornstarch. Transfer the mochi dough onto the surface and let it cool for a few minutes. Once cool enough to handle, dust your hands with cornstarch, and divide the dough into small pieces.
4. Fill with Ice Cream
Flatten each piece of mochi dough into a circle and place a small scoop of ice cream in the center. Carefully fold the edges over the ice cream and pinch to seal. Roll gently in your hands to shape.
5. Freeze
Place the filled mochi ice cream balls on a plate lined with parchment paper and freeze for at least 2 hours before serving.
