Brewing Directions
1. Mashing
In a large mash tun, combine the water, Pilsner malt, and rice. Heat to 65°C (149°F) and hold for 60 minutes.
2. Lautering
After mashing, drain the wort from the mash tun and rinse the grains with hot water to extract more sugars.
3. Boiling
Bring the wort to a boil and add the hops. Boil for 60 minutes, adding hops at intervals for bitterness and aroma.
4. Cooling
After boiling, cool the wort quickly using a wort chiller until it reaches 20°C (68°F).
5. Fermentation
Transfer the cooled wort to a fermentation vessel and pitch the yeast. Seal the vessel and allow to ferment for 1-2 weeks.
6. Bottling
After fermentation is complete, bottle the beer with priming sugar and allow to carbonate for 1-2 weeks.
7. Enjoy
Chill the bottles and enjoy your refreshing Japanese beer!
