Prepare the Cream Base

In a medium saucepan, combine the heavy cream, whole milk, and granulated sugar over medium heat. Stir until the sugar is completely dissolved.

Mix in Matcha

In a small bowl, whisk together the matcha green tea powder with a few tablespoons of the warm cream mixture to create a smooth paste. Then, stir this paste back into the saucepan with the rest of the cream base.

Temper the Egg Yolks

In a separate bowl, whisk the egg yolks. Gradually add a small amount of the hot cream mixture to the yolks while whisking constantly to temper them. This prevents the yolks from scrambling.

Combine and Cook

Pour the tempered yolk mixture back into the saucepan with the cream mixture. Cook over low heat, stirring constantly until the mixture thickens and coats the back of a spoon (about 5-7 minutes).

Cool and Add Flavor

Remove from heat and stir in the vanilla extract and a pinch of salt. Pour the mixture into a bowl and let it cool to room temperature, then cover and refrigerate until chilled (about 2-4 hours or overnight).

Churn the Ice Cream

Once the mixture is chilled, churn it in an ice cream maker according to the manufacturer's instructions until it reaches a soft-serve consistency.

Transfer the ice cream to an airtight container and freeze for at least 4 hours or until firm.
