Hashbrowns
Flip in sections and cook another 3–4 minutes until crisp and cooked through. Reduce heat if browning too quickly. Season with a pinch of salt and keep warm on low while making the omelette.
Toast
Toast 2 slices of bread to desired doneness in a toaster or oven. Spread butter on both slices and keep warm.
Omelette Cooking
Crack 3 large eggs into a medium bowl. Add 2 tbsp whole milk, 1 tsp kosher salt, and 1 tsp freshly ground black pepper. Whisk vigorously until mixture is homogenous and slightly frothy (about 30 seconds).
Place a 8–10 inch nonstick skillet over medium heat. Add 1 tbsp unsalted butter and swirl to coat the pan. Heat until butter foams but does not brown.
Pour the egg mixture into the skillet and let sit undisturbed for 8–10 seconds to start setting. Using a heatproof spatula, gently push the set edges toward the center while tilting the pan so uncooked egg runs to the edges. Continue this motion for about 45–60 seconds until the eggs are mostly set but still slightly moist on top.
Evenly distribute 1/2 cup shredded cheddar (or preferred cheese) and any chosen fillings (up to about 1/2 cup combined — e.g., 1/4 cup diced bell pepper, 1/4 cup diced onion, 1/4 cup mushrooms, or 1/4 cup cooked ham) onto one half of the omelette. If fillings are raw (onion, pepper, mushrooms) you may pre-sauté them 1–2 minutes in the pan before pouring eggs to soften; if pre-sautéing, remove and reserve before eggs.
Using the spatula, gently fold the empty half of the omelette over the filled half to create a semicircle. Cook 30–60 seconds more to melt the cheese and finish cooking, keeping the interior tender (avoid overcooking).
