Seasoned Ground Beef

Cook aromatics

Heat a large skillet or sauté pan over medium-high heat. Add 1 tablespoon vegetable oil. When shimmering, add the finely diced onion and cook 3–4 minutes until soft and translucent. Add minced garlic and cook 30 seconds until fragrant.

Brown the beef

Add the ground beef to the pan. Break it up with a spatula and cook until no longer pink, about 6–8 minutes, letting it develop some browned bits for flavor.

Season and simmer

Stir in chili powder, ground cumin, smoked paprika, dried oregano, salt, and black pepper. Mix thoroughly so spices coat the beef. Add tomato paste and cook 1–2 minutes to deepen flavor. Pour in 1 cup beef broth (or water), reduce heat to medium-low, and simmer uncovered for 6–8 minutes until slightly thickened. Taste and adjust salt/pepper. Remove from heat and keep warm.

Prep oven and shells

Preheat oven to 375°F (190°C). Lightly coat a large baking sheet or two with cooking spray or brush with neutral oil. Arrange pre-formed hard taco shells upright in rows on the baking sheet so they won't tip; use two sheets if needed.

Mix cheese

In a large bowl combine shredded cheddar, Monterey Jack, and optional queso. Stir in dried cilantro if using. Reserve about 1 cup of the blend for topping.

Fill shells

Using a slotted spoon, fill each hard shell with approximately 2 tablespoons of the seasoned ground beef (about 24 shells will use ~3 lbs beef; adjust per guest). Top each filled shell with about 1–2 tablespoons of the Mexi-cheese blend so the cheese sits on top and slightly into the meat.

Bake

Bake assembled tacos in the preheated oven 8–10 minutes until the cheese is melted and shells are heated through. For a crisper shell, bake up to 12 minutes but watch to avoid burning. Remove from oven and let rest 1–2 minutes.

Prep toppings

While tacos bake, arrange shredded lettuce, diced tomatoes, sliced black olives, diced red onion, Picante salsa, sour cream, lime wedges, chopped cilantro, and pickled jalapeños in individual bowls or a buffet line. Keep salsa and sour cream chilled until serving.

Place reserved extra shredded cheese and hot sauce at the end of the line so guests can add more if desired.

Assemble & Serve

Place baked, cheese-topped hard-shell tacos on a serving platter or in chafing trays to keep warm. Provide plates, napkins, and utensils.

Guests build tacos by adding lettuce, tomatoes, olives, onion, a spoonful of Picante salsa, and a dollop of sour cream. Garnish with a squeeze of lime and fresh cilantro if desired. Offer hot sauce and extra cheese.

Leftovers: refrigerate cooled meat and toppings separately in airtight containers for up to 3–4 days. Reheat tacos in a 350°F oven for 6–8 minutes to regain crispness.
