Meat (choose one)

Bacon

Heat a large skillet over medium heat. Add bacon strips in a single layer and cook 3–5 minutes per side until crisp or to desired doneness. Transfer to a paper-towel-lined plate and keep warm in a low oven (about 200°F / 95°C) while you finish the rest.

Place sausage links in a cold skillet, turn heat to medium, and cook 10–12 minutes, turning frequently, until browned and cooked through (internal temp 160°F / 71°C). Transfer to a plate and keep warm.

Ham

Heat a nonstick skillet over medium-high, add the ham slice and cook 1–2 minutes per side until lightly browned and warmed through. Keep warm.

Hashbrowns

Grate the peeled potato on the large holes of a box grater. Place grated potato in a clean kitchen towel or several layers of paper towel and squeeze out as much liquid as possible (this yields crisper hashbrowns).

In a medium bowl, toss the drained grated potato with the grated onion (if using), 0.5 tsp salt and 1/8 tsp pepper.

Heat a 10–12 inch skillet over medium-high heat and add 2 tablespoons vegetable oil. When oil shimmers, spread the potato into an even 7–8 inch round. Press down gently with a spatula. Reduce heat to medium and cook undisturbed 5–7 minutes until the bottom is golden brown and crisp.

Flip the hashbrown (or divide and flip in sections) and cook another 4–6 minutes until the other side is golden and the potato is cooked through. Transfer to plate and keep warm.

Eggs & Toast

While hashbrowns cook, start the toast. Lightly butter both sides of the bread slices. Toast in a skillet over medium heat 1–2 minutes per side until golden, or use a toaster to desired doneness. Keep warm in oven if needed.

For fried eggs: In a small nonstick skillet, melt 1 tablespoon butter over medium-low. Crack two eggs into the skillet, sprinkle with 1/4 tsp salt and a pinch of pepper. Cook until whites are set but yolks are still runny, about 2–3 minutes for sunny-side up. For over-easy, carefully flip and cook 15–30 seconds more. For scrambled, whisk eggs with a pinch of salt, pour into skillet and gently stir until soft curds form, about 1–2 minutes.

Plate the eggs with the toast and hashbrowns. Add the chosen meat. Sprinkle chopped parsley over hashbrowns or eggs if desired and serve immediately.
