prep carrots

Preheat oven to 425°F (220°C). Wash and peel the carrots. Trim the tops and tips. If carrots are large, halve them lengthwise or cut into 3/4–1 inch (2–2.5 cm) thick batons so pieces are uniform in size.

season carrots

Place carrots in a large bowl. Add olive oil, honey, lemon juice, thyme leaves, kosher salt, and freshly ground black pepper. Toss with your hands or a spatula until carrots are evenly coated.

Arrange the carrots in a single layer on a rimmed baking sheet lined with parchment paper or lightly oiled. Roast in the preheated oven for 20–25 minutes, turning once halfway through, until carrots are tender and lightly caramelized at the edges. Smaller carrots may take 15–18 minutes; larger pieces may need up to 30 minutes.

Remove the baking sheet from the oven. Taste and adjust seasoning with additional salt, pepper, or a squeeze more lemon juice if desired. Transfer to a serving dish.
