    Season and Brown Ribs

    Pat the short ribs dry with paper towels. Season all sides generously with kosher salt (about 1 tablespoon) and freshly ground black pepper. Heat a large Dutch oven or heavy ovenproof pot over medium-high heat and add the vegetable oil. When the oil is shimmering, add the ribs in a single layer (work in batches if necessary) and brown on all sides, about 3–4 minutes per side, until deep mahogany. Transfer browned ribs to a plate and set aside.

    Sauté Aromatics

    Reduce heat to medium. Add the quartered onion, carrots, and celery to the pot and cook, stirring occasionally, until vegetables are softened and beginning to brown, about 6–8 minutes. Add the smashed garlic and tomato paste; cook, stirring constantly, for 1–2 minutes to cook the paste and remove its raw edge.

    Deglaze and Build Braising Liquid

    Pour in the dry red wine (if using) and scrape up any brown bits from the bottom of the pot with a wooden spoon. Bring wine to a simmer and reduce by half, about 2–3 minutes. Add the beef stock, bay leaves, thyme, rosemary, and Worcestershire sauce. Stir to combine.

    Braise Ribs

    Return the browned short ribs and any accumulated juices to the pot. The liquid should come about two-thirds up the ribs; add a bit more stock or water if necessary. Bring to a gentle simmer, then cover the pot and transfer to a preheated oven at 325°F (160°C). Braise until the meat is very tender and falling from the bone, about 2.5–3 hours. Halfway through cooking, check the liquid level and add a splash of stock if needed.

    Rest and Strain

    Carefully remove the pot from the oven. Transfer the ribs to a cutting board and tent loosely with foil to rest. Strain the braising liquid through a fine-mesh sieve into a heatproof bowl or saucepan, pressing on solids to extract flavor. Discard the solids (or reserve some cooked vegetables to mash into the jus if desired). Skim excess fat from the surface of the strained liquid with a spoon or use a fat separator. Keep the jus warm.

    Shred or Slice Ribs

    When cool enough to handle, remove the meat from the bones with two forks and shred or slice into sandwich-sized pieces. Taste the strained jus and adjust seasoning with additional salt and pepper if necessary.

    Prepare Rolls

    Preheat oven broiler or a skillet. Butter the cut sides of each roll lightly with the softened unsalted butter. If using a broiler, place rolls cut-side up on a sheet pan and broil until the butter is bubbly and edges are golden, about 1–2 minutes. If using a skillet, toast buttered sides over medium heat until golden, about 1–2 minutes.

    Assemble Sandwiches

    Pile the shredded or sliced braised rib meat onto the bottom half of each toasted roll. Spoon a few tablespoons of the warm strained jus over the meat to moisten (reserve most jus for dipping). Top each sandwich with a slice of provolone or Swiss cheese. Place sandwiches under the broiler briefly (or back in the hot skillet with a lid) just until the cheese melts, about 1–2 minutes.

    Finish and Serve

    Place the top roll on each sandwich and season lightly with a pinch of salt and pepper, if desired. Serve immediately with small bowls of the hot au jus (strained braising liquid) on the side for dipping. Garnish optionally with pickled hot peppers and chopped parsley.

Optional Garnishes

    Offer pickled hot peppers or pepperoncini on the side for guests to add a tangy, spicy contrast. Sprinkle chopped fresh parsley over sandwiches just before serving for a fresh finish.
