- 1
Prepare glass
Chill a copper mule mug or highball glass by filling it with ice and setting aside while you prepare the cocktail.
- 2
Muddle berries, citrus and mint
Discard the ice from the chilled glass. In a mixing glass or the empty mug, place 4 fresh blackberries (or mixed berries), the juice of half a lime (about 0.5 each), 8 fresh mint leaves (reserve a sprig for garnish) and 0.5 oz simple syrup. Gently muddle 6–8 times until the berries are broken down and the mint releases aroma — avoid over-muddling the mint to prevent bitterness.

- 4
Top with ginger beer
Carefully top the drink with 4 oz chilled ginger beer. Give the cocktail a gentle stir (2–3 strokes) to lift the muddled fruit through the drink without breaking up the crushed ice too much.
- 5
Finish and garnish
Express a quarter teaspoon of fresh lemon zest over the drink (optional) to add bright aroma. Garnish with the reserved mint sprig and a lime wheel or wedge on the rim.
- 6
Serve
Serve immediately with a straw and optional cocktail pick of a spare berry for visual appeal.
