Method
Prepare glass
- 1
Salt the rim
Pour the coarse sea salt onto a small plate. Run a lime wedge around the rim of a rocks glass (or coupe) and dip the rim into the salt so a light, even crust forms. Set glass aside.
Make the cocktail
- 2
Add the blanco tequila, fresh lime juice, fresh grapefruit juice, dry curaçao, agave syrup, and a pinch of the fine sea salt to a cocktail shaker.
- 3
Fill the shaker with ice until about 3/4 full. Secure the lid and shake vigorously for 12–15 seconds, until the shaker is very cold to the touch and the mixture is well chilled and slightly diluted.
- 4
Strain the cocktail into the prepared salt-rimmed rocks glass over fresh ice. If you prefer served 'up', double-strain into the chilled glass without additional ice.
Finish and serve
- 5
Express the oils from the grapefruit twist over the surface of the drink by holding the twist over the glass and giving it a quick squeeze, then drop the twist (or float a grapefruit wheel) into the drink as garnish.
- 6
Taste and, if needed, adjust balance: add up to 0.25 oz agave syrup for more sweetness or another small pinch of fine sea salt to accentuate flavors.
- 7
Serve immediately while cold.
