Burger Patties

Form the patties
Divide the ground chuck into two equal portions (about 8 oz each). Lightly form each portion into a loose ball, then flatten gently into a patty about 3/4" to 1" thick. Make a shallow dimple in the center of each patty with your thumb to help it cook evenly.

Season
Lightly brush both sides of each patty with the vegetable oil. Season one side with half of the kosher salt and pepper, flip and season the other side with the remaining salt and pepper. Sprinkle 1/2 teaspoon Worcestershire sauce over each patty (total 1 tsp divided).

Cook the patties
Heat a heavy skillet or cast-iron pan over medium-high heat until shimmering. Place patties in the dry pan (you can add a teaspoon of oil if the pan is dry). Cook without moving 3 to 4 minutes to develop a brown crust. Flip and cook 2 to 3 minutes for medium (adjust time for desired doneness). During the last 1 minute of cooking, place a slice of American cheese on each patty and cover the pan briefly to melt the cheese.

Toast the buns
Split the buns and spread softened butter on cut sides. After the patties are nearly done (or while cheese is melting), place buttered cut sides down in a separate skillet or on the same skillet edge over medium heat. Toast 1 to 2 minutes until golden and crisp — watch carefully to avoid burning.

Prepare toppings
While patties cook and buns toast, arrange the toppings: rinse and dry lettuce leaves, slice tomato if not pre-sliced, separate onion rings and pickles. Mix mayonnaise, mustard and ketchup together if you prefer a combined burger sauce (optional).

Assemble the Hill Street Burger
Spread about 1 teaspoon of the mayo-mustard-ketchup mixture on the bottom bun. Place shredded lettuce or leaves on the bottom bun, then set the cheesy burger patty on top. Add tomato slice, red onion slices and pickle chips. Spread the remaining sauce on the top bun and close the burger. If using bacon or hot sauce, add now.

Transfer the assembled burgers to a plate, let rest 1 minute, then serve immediately while hot with your choice of sides.
