Preheat and prepare loaf
Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper or foil. Using a serrated knife, slice the loaf in half lengthwise (or slice crosswise into 1-inch thick slices without cutting all the way through if you prefer pull-apart style). If halved, place cut sides up on the prepared sheet.

Make garlic herb butter
In a medium bowl, combine the softened unsalted butter, minced garlic, chopped parsley, chopped oregano or basil (if using), lemon juice, salt, black pepper, and red pepper flakes. Mix thoroughly with a fork until smooth and evenly distributed. Taste and adjust salt or lemon juice as desired.

Add cheeses
Sprinkle the shredded mozzarella evenly over the buttered surface(s), followed by the grated Parmesan. Press gently so the cheese adheres to the buttered bread. If you like a very cheesy top, add an extra 1/4–1/2 cup mozzarella.

Brush edges and bake
Brush exposed crust edges lightly with olive oil to promote crisping. Place the baking sheet in the preheated oven and bake for 10–12 minutes until the cheese is melted and edges begin to brown. For a softer top, bake 10 minutes; for a browned, bubbly top, bake up to 14 minutes.

Optional broil
For a golden-brown, slightly blistered cheese, switch the oven to broil on high for 1–2 minutes—watch carefully to prevent burning. Remove when cheese is bubbly and dotted with light brown spots.

Garnish & serve
Remove from oven, sprinkle with the extra chopped parsley, and let rest 2–3 minutes. If you prepared a halved loaf, slice into portions and serve warm. If pull-apart style, serve by tearing individual pieces.
