Preparation

1

Prepare the Oysters

Shuck the oysters carefully, making sure to keep the liquid inside the shell. Place them on a bed of crushed ice on a large platter.

2

Cook the Shrimp and Scallops

In a pot of boiling salted water, cook the shrimp for 2-3 minutes until pink and opaque, then remove and chill. Sear the scallops in a hot pan with a little olive oil for 2-3 minutes per side until golden brown, then chill.

3

Prepare the Crab Legs

If using precooked crab legs, simply thaw them in the refrigerator overnight. If raw, steam them for about 5-7 minutes until cooked through.

4

Arrange the Seafood

On the platter with the oysters, arrange the shrimp, scallops, crab legs, and smoked salmon artistically. Add lemon wedges and fresh herbs for garnish.

5

Serve with Accompaniments

Place the cocktail sauce and horseradish on the side for dipping. Sprinkle sea salt over the seafood as desired.
