Directions to Prepare Spam Musubi
Prepare the Sushi Rice
Rinse the sushi rice under cold water until the water runs clear. Cook the rice according to the package instructions. Once cooked, transfer to a bowl and mix in rice vinegar, sugar, and salt. Let it cool to room temperature.
Cook the Spam
Slice the Spam into 8 equal pieces. Heat cooking oil in a skillet over medium heat. Add the Spam slices and cook for about 2-3 minutes on each side until golden brown. Drizzle soy sauce and sesame oil over the Spam during the last minute of cooking.
Assemble the Musubi
Place a sheet of nori on a clean surface, shiny side down. Moisten your hands and take a small amount of sushi rice (about 1/4 cup) and form it into a rectangle (the size of the Spam slice). Place a cooked Spam slice on top of the rice, then mold another layer of rice on top. Press down gently to shape. Wrap the nori around the rice and Spam, sealing with a bit of water to hold it together.
Serve
Cut the Spam musubi in half or into bite-sized pieces and serve immediately or wrap in plastic wrap for later enjoyment.
