Preheat and prepare pan

Preheat the oven to 160°C (320°F). Line a 9x5 inch (23x13 cm) loaf pan with two sheets of parchment paper so the paper extends above the rim on both long sides (this makes an easy lift-out). Lightly butter the parchment.

Sift together the cake flour, cornstarch and salt into a medium bowl. Set aside.

Melt 40 g unsalted butter in a small saucepan or microwave. Combine melted butter with 40 ml warm whole milk and 20 g honey in a small bowl; stir to dissolve honey and keep warm.

Meringue

Whip egg whites

Separate the eggs while still cold, then bring the whites to room temperature (about 15–20 minutes). Place the whites in a clean, grease-free mixing bowl. Add 1 tsp lemon juice. Using an electric mixer, beat whites on medium speed until foamy.

Gradually add 60 g granulated sugar in three additions while increasing speed to medium-high. Beat until stiff, glossy peaks form but are still slightly flexible. Do not overbeat.

Batter Assembly

Prepare yolk-sugar mixture

In a separate large bowl, combine 6 egg yolks (from the separated eggs) and 140 g granulated sugar. Whisk by hand or with a mixer on medium-high until the mixture is pale, thick and ribbon-like (about 3–4 minutes).

Tempering and mixing: Add about one-third of the sifted flour mixture to the yolk mixture and fold gently to combine. Add remaining flour in two additions, folding just until incorporated. The batter will be thick.

Stir the warm milk-butter-honey mixture into the yolk-flour batter in a steady stream, folding gently until evenly mixed. Work quickly but gently to avoid deflating the batter.

Fold one-third of the whipped meringue into the yolk batter to lighten it — use a rubber spatula and cut through the center, sweep around the bowl and fold over. Repeat by folding in half of the remaining meringue, then fold in the rest until just combined and there are no visible streaks. Stop as soon as the batter is homogeneous; do not overfold.

Baking

Bake the castella

Pour the batter into the prepared loaf pan and gently tap the pan on the counter 2–3 times to release large air bubbles. Smooth the top with an offset spatula. Place in the preheated oven on the middle rack and bake at 160°C (320°F) for about 50–60 minutes, or until the top is deeply golden and a skewer inserted into the center comes out clean with a few moist crumbs.

If the surface browns too quickly, tent a loose piece of foil over the top after 30–35 minutes to prevent burning while allowing the cake to continue rising and cooking.

When done, remove the pan from the oven and immediately drop the pan gently from about 10–15 cm (4–6 inches) onto a folded kitchen towel on the countertop twice; this helps level the top and reduce large air pockets for the classic smooth Castella surface.

Cooling and Serving

While the cake is still warm, use the extended parchment to lift the cake out of the pan and transfer it to a wire rack. Place another sheet of parchment on top of the cake and weigh it with a small flat board or another rack plus a light weight (200–300 g) to compress slightly — this helps keep the texture tight and fine. Let cool completely at room temperature (1.5–2 hours).

Once cooled and compressed, unwrap the cake, trim the edges if desired, and slice into 1.5–2 cm thick slices with a sharp serrated knife. Dust lightly with powdered sugar, if using, and serve. Store tightly wrapped at room temperature for up to 3 days or refrigerate up to 1 week (bring to room temperature before serving).
