Prepare the eggs: place 4 eggs in a saucepan and cover with cold water by 1 inch. Bring to a gentle boil, then reduce heat and simmer for 10 minutes. Transfer eggs to an ice bath for 5 minutes, peel, and dice or crumble. Set aside.

Cook the bacon: in a skillet over medium heat, cook bacon slices until crisp, about 6–8 minutes, turning as needed. Drain on paper towels and chop into bite-size pieces.

Prep vegetables and cheese: rinse and spin-dry mixed greens. Halve cherry tomatoes. Shred the cheddar if not pre-shredded. If using avocado, slice just before assembly to prevent browning.

Pound and Marinate Chicken

Trim chicken breasts of excess fat and slice each breast horizontally to make 4 thin cutlets (about 1/2-inch thick). Place cutlets between plastic wrap and gently pound to even thickness if needed. Put cutlets into a bowl, pour 1 cup buttermilk over them, cover and refrigerate for 20–30 minutes (or up to 2 hours) to tenderize.

Prepare Breading

In a shallow dish combine 1 cup flour, 1/4 cup cornstarch, 1 tsp paprika, 1 tsp garlic powder, 1/2 tsp onion powder, 1 tsp salt, and 1/2 tsp black pepper. In a second shallow dish whisk 2 eggs with 2 tbsp milk to make an egg wash.

Dredge

Remove chicken from buttermilk, letting excess drip off. First coat each piece in the seasoned flour mixture, then dip in the egg wash, and finally press again into the flour mixture for a double-coated crust. Place breaded cutlets on a tray while oil heats.

Fry

Pour about 1 cup vegetable oil into a large skillet (oil depth ≈ 1/4–1/2 inch). Heat over medium-high until oil reaches 350°F (175°C) or a drop of water sizzles vigorously. Fry cutlets 2–3 minutes per side until golden brown and internal temperature reaches 165°F (74°C). Work in batches to avoid crowding. Transfer to a wire rack set over a sheet pan and rest 3–5 minutes, then slice into strips.

Dressing

Make dressing: in a small bowl whisk together 1/2 cup mayonnaise, 1/4 cup sour cream, 2 tbsp lemon juice, 1 tsp Dijon mustard, 1 tsp honey, 1/2 tsp salt, and 1/4 tsp black pepper until smooth. Taste and adjust seasoning. Chill until ready to serve.

Assembly

Assemble salads: divide mixed greens evenly among 4 plates (about 1.5 cups per plate). Arrange halved cherry tomatoes, crumbled or diced hard-boiled eggs, chopped bacon, shredded cheddar, and avocado slices (if using) in separate rows or sections over the greens to create a classic Cobb-style presentation.

Top with chicken: place 3–4 warm sliced fried chicken strips over each salad.

Dress and serve: drizzle about 2–3 tablespoons dressing per salad, or serve dressing on the side. Serve immediately while chicken is still warm.
