Marinated Steak

Prepare marinade
Combine lime juice, orange juice, 2 tbsp olive oil, minced garlic, cumin, smoked paprika, oregano, chili powder, black pepper and kosher salt in a bowl. Whisk until blended.

Marinate steak
Place the steak in a shallow dish or zip-top bag. Pour the marinade over the steak, turning to coat thoroughly. Press out excess air and marinate in the refrigerator for at least 30 minutes and up to 4 hours. If short on time, 30 minutes still adds good flavor.

Bring to room temperature
About 20–30 minutes before cooking, remove steak from refrigerator and let it come toward room temperature for more even cooking.

Cook vegetables
Heat a large heavy skillet or cast-iron pan over medium-high heat. Add 1 tbsp olive oil. When oil shimmers, add onion and peppers in an even layer. Sprinkle with 1 tsp kosher salt and 1/2 tsp black pepper. Cook, stirring occasionally, until vegetables are softened and edges are charred in spots, about 8–10 minutes. Transfer to a plate and keep warm.

Rest and slice
Transfer steak to a cutting board and let rest 5–10 minutes. Slice thinly across the grain into 1/4-inch slices.

Assemble fajitas
Lay a warmed tortilla on a plate. Add a portion of sliced steak, a spoonful of sautéed peppers and onions, sprinkle with chopped cilantro and cheese if using. Add a dollop of crema or sour cream and pickled red onions, and finish with a squeeze of lime.

Serve immediately while hot. Offer extra lime wedges, salsa, and hot sauce at the table.
