Drink
Method
Prepare & Build
Chill glass and ginger beer (optional)
If time allows, place the highball glass in the freezer for 5–10 minutes and ensure the ginger beer is well chilled. Cold components keep the drink fizzy longer.
Fill glass with ice
Fill a highball glass generously with cubed ice. The instruction 'the more, the better' aims to minimize dilution and keep the drink very cold, so pack the glass nearly to the top.
Add Dubliner Honeycomb
Measure 1 1/4 oz (1.25 oz) Dubliner Honeycomb and pour it directly over the ice in the highball.
Top with ginger beer
Slowly pour 3.5–5 oz (use about 4.25 oz as a mid-range amount) of chilled ginger beer down the side of the glass to preserve carbonation. Pour gently to avoid overflow and to keep bubbles lively.
Stir gently
Using a bar spoon or long spoon, stir the drink gently 3–4 times to combine the liqueur and ginger beer without flattening the fizz. Stir just enough to integrate flavors.
Garnish and serve
Finish by resting one fresh orange slice on the rim or floating it on top of the drink. Serve immediately while cold and effervescent.
