Preparation Instructions

1

Prepare the Roast

Preheat the oven to 350°F (175°C). Rub the beef roast with olive oil, then season generously with salt, black pepper, and garlic powder.

2

Roast the Beef

Place the seasoned roast in a roasting pan and cook in the preheated oven for about 1.5 hours, or until the internal temperature reaches 135°F (57°C) for medium-rare. Remove from the oven and let it rest for 15 minutes before slicing.

3

Make Dilly Cucumbers

While the roast is cooking, slice the cucumbers thinly. In a bowl, combine the white vinegar, sugar, dill weed, and a pinch of salt. Stir until the sugar dissolves. Add the sliced cucumbers and toss to coat. Let marinate for at least 30 minutes.

4

Serve

Slice the roast beef against the grain and serve with the dilly cucumbers and a dollop of prepared horseradish on the side.
