Method
Preparation and Cooking Instructions
Prepare the Escabeche
In a large skillet, heat olive oil over medium heat. Add sliced red onion, garlic, and fennel. Sauté until the onion is translucent and fennel is tender, about 5-7 minutes.
Add Zucchini and Seasonings
Add sliced zucchini, bay leaves, black peppercorns, and salt to the skillet. Stir to combine and cook for another 3-4 minutes.
Add Liquid
Pour in the white wine vinegar and water. Bring to a simmer, allowing the flavors to meld for about 5 minutes.
Cook Mussels
Add the mussels to the skillet, cover, and steam for 5-7 minutes or until the mussels have opened. Discard any that do not open.
Prepare Brioche
While the mussels are cooking, toast the brioche slices until golden brown.
Serve
Serve the mussels and escabeche mixture over the toasted brioche and garnish with fresh dill.
