Prepare the Sweet Potatoes

Peel the sweet potatoes and chop them into small cubes. Boil in a pot of water for about 15 minutes or until tender. Drain and allow to cool.

Preheat Oven

Preheat your oven to 350°F (175°C).

Mixing Ingredients

Mash the Sweet Potatoes

In a large mixing bowl, mash the cooled sweet potatoes until smooth.

Combine Ingredients

Add brown sugar, melted butter, cinnamon, nutmeg, vanilla extract, and eggs to the mashed sweet potatoes. Mix until well combined.

Add Dry Ingredients

In a separate bowl, whisk together flour, baking powder, and salt. Gradually add this mixture to the sweet potato mixture, stirring until just combined.

Fold in Pecans

Gently fold in the chopped pecans until evenly distributed in the batter.

Baking

Transfer to Baking Dish

Pour the sweet potato batter into a greased 9x13 inch baking dish and spread evenly.
