Method

Sparkling Citrus Cocktail Base

    Chill tools and ingredients

    Place your sparkling wine and club soda in the refrigerator at least 30 minutes before serving so they are well chilled. Chill glasses if possible.

    In a large mixing pitcher, pour the fresh orange juice and lemon juice. Add the elderflower liqueur (if using) and the simple syrup. Stir gently to combine.

    Add the chilled sparkling wine to the pitcher. Pour slowly to preserve bubbles and stir once gently with a long spoon to incorporate β€” avoid vigorous stirring which will flatten the fizz.

    Top the mixture with the club soda/sparkling water to adjust effervescence. Taste and, if you prefer sweeter, add up to 1 teaspoon additional simple syrup (not measured in ingredients) and stir gently.

Garnish & Serving

    If serving from a pitcher, add large ice cubes to the serving pitcher or individual glasses just before pouring to keep the drink chilled without watering it down too quickly.

    Twist an orange peel over each glass to release the oils, then drop the twist into the glass. Add a fresh mint sprig for aroma. For an elegant presentation, lightly slap the mint between your palms before garnishing to increase aroma.

    Pour the cocktail gently into chilled flutes or coupe glasses, filling about 3/4 full to allow bubbles to express. Serve immediately.
