Cookie Dough

In a small bowl, combine the ground flaxseed and warm water. Stir and let sit 5–10 minutes until thickened to a gel-like consistency. This acts as the egg replacer.

Preheat oven to 350°F (175°C). Line two baking sheets with parchment paper or silicone baking mats.

In a medium bowl whisk together the all-purpose flour, rolled oats (if using), baking soda and salt until evenly combined.

In a large bowl whisk the granulated sugar and light brown sugar with the oil until fairly smooth. Add the applesauce, vanilla extract, and plant-based milk; whisk until uniform. Stir in the prepared flax 'egg' until incorporated.

Add the dry ingredients to the wet in two additions, folding with a spatula after each addition until just combined. Avoid overmixing. If the dough seems dry, add 1 teaspoon of plant milk at a time until it holds together but is still slightly tacky.

Fold the vegan chocolate chips into the dough until evenly distributed.

Using a 1.5 tablespoon scoop or two teaspoons, portion dough into roughly 1 1/4-inch rounds and place them 2 inches apart on the prepared baking sheets. Slightly flatten each mound with your palm or the back of a spoon to form discs about 1/2 inch thick. Optionally roll edges lightly in extra oats for a rustic look.

If using, lightly sprinkle a pinch (about 1/16–1/8 tsp) of coarse sea salt onto the top of each cookie just before baking to elevate flavor.

Bake cookies in the preheated oven for 10–12 minutes, or until edges are just golden and centers still look slightly soft. Oven times vary; start checking at 9 minutes if your oven runs hot.

Let the cookies cool on the baking sheet for 5 minutes to firm up, then transfer to a wire rack to cool completely. Cookies will set as they cool and remain soft-chewy.

Storage

Store cooled cookies in an airtight container at room temperature for up to 4 days. For longer storage, freeze baked cookies in a single layer on a tray until firm, then transfer to a freezer bag for up to 3 months. Thaw at room temperature or warm briefly in a low oven.
