Prepare and mix
Place the 1 lb ground turkey in a large mixing bowl. Add minced onion (1 tbs), minced garlic (1 tsp), chopped parsley (2 tsp), dried sage (1 tsp), dried thyme (1 tsp), smoked paprika (1 tsp), brown sugar (1 tsp), kosher salt (3 tsp), black pepper (1 tsp), and optional red pepper flakes (1 tsp if using). If you prefer a firmer patty that holds together better, add the optional binder: 1 large beaten egg and 2 tbs panko breadcrumbs. Add 2 tbs cold water to help with mixing and to keep patties moist. Using clean hands or a spatula, gently but thoroughly combine the mixture until spices are evenly distributed; avoid overworking the meat to keep patties tender.
Form patties
Divide the mixture into 8 equal portions (about 2 oz / roughly 1/4 cup each) for small breakfast patties, or 4 equal portions for larger sandwich-size patties. Wet your hands slightly to prevent sticking and shape each portion into a round flat patty about 1/2 inch thick. Make a shallow dimple in the center of each patty with your thumb to prevent doming during cooking.
Chill (optional but recommended)
Place formed patties on a tray lined with parchment and chill in the refrigerator for 15–30 minutes. Chilling firms the patties and helps them hold together while cooking.
Cook on stovetop
Heat a large skillet over medium heat and add 1 tsp oil. When the oil glistens, add patties in a single layer without crowding (work in batches if necessary). Cook patties undisturbed for 4–5 minutes until the underside is golden-brown. Flip and cook for another 3–5 minutes until the internal temperature reaches 165°F (74°C). If patties brown too quickly, lower heat to medium-low and cover loosely for 1–2 minutes to finish cooking; this helps ensure they cook through without burning.
