Tofu & Seasoning

Prepare tofu

Drain the 14 oz block of firm tofu. Wrap in a clean kitchen towel or paper towels and press gently with a cutting board or press for 5–10 minutes to remove excess water. Crumble the pressed tofu into bite-sized pieces with your hands or fork so it resembles scrambled egg curds.

Mix seasonings

In a small bowl combine 1 tsp turmeric, 1 tsp ground cumin, 1 tsp smoked paprika, 1 tsp ground black pepper, 1 tsp salt, 2 tbsp nutritional yeast (if using), and 2 tbsp water or unsweetened plant milk. Stir into a smooth paste; this helps distribute the turmeric evenly and prevents clumping.

Toss tofu with seasoning paste: Place the crumbled tofu in a bowl and pour the seasoning paste over it. Gently fold with a spatula until tofu is evenly coated. Set aside while you cook the vegetables so flavors meld.

Sauté aromatics and vegetables

Heat 1 tbsp olive oil in a large nonstick skillet or cast-iron pan over medium heat. Add 1 cup diced yellow onion and sauté 4–6 minutes until softened and translucent. Add 2 minced cloves garlic and 1/2 cup diced red bell pepper; cook 2–3 minutes until the pepper softens and garlic is fragrant.

Add tofu

Increase heat slightly to medium-high. Add the seasoned crumbled tofu to the pan and spread into an even layer. Let it sit undisturbed 1–2 minutes to develop light color, then stir and continue to cook, stirring occasionally, 4–6 minutes until some pieces brown lightly and the tofu is heated through.

Add greens & finish

Reduce heat to medium. Add 2 cups packed baby spinach and stir until wilted, about 1–2 minutes. Taste and adjust seasoning — add up to 1/2 tsp more salt or a pinch more black pepper if needed. If the scramble seems dry, sprinkle 1–2 tbsp water and stir to loosen.

Final touches: Remove from heat and fold in sliced scallions and chopped cilantro or parsley if using. Optionally squeeze a little lemon or lime juice for brightness and stir.

Plate the tofu scramble warm. Serve with sliced avocado and toast, tortillas, or grains. Offer hot sauce or salsa on the side. Leftovers keep in an airtight container in the refrigerator for 3–4 days; reheat gently in a skillet or microwave until warmed through.
