Preheat and prepare

Preheat oven to 425°F (220°C). Line a large baking sheet with parchment paper or a silicone mat. If using a convection setting, reduce temperature to 400°F (200°C).

Cut sweet potatoes

Wash and dry sweet potatoes thoroughly. Trim ends. Cut into evenly sized batons about 1/3 to 1/2 inch thick so fries cook uniformly. The listed 2 cups corresponds to about 1 large sweet potato (adjust if making more).

Spread fries in a single layer on the prepared baking sheet with a little space between pieces — avoid overcrowding which causes steaming. For best crispiness, leave an inch or two between fries where possible.

Bake and flip

Bake in the preheated oven for 20 minutes. After 20 minutes, remove the sheet and use a spatula to flip each fry or turn the pan to rotate fries for even browning. Return to oven and bake another 10–15 minutes, until edges are crisp and centers are tender. Total baking time 30–35 minutes depending on thickness and oven.

If fries need more color or crispness, broil on high for 1–2 minutes while watching closely to avoid burning. Remove immediately when golden and crisp.
