Sweeten and flavor plain Greek yogurt

In a large bowl, combine the 6 cups plain Greek yogurt with 1/4 cup honey, the lemon zest, and 1/8 cup maple syrup. Stir until smooth and taste; adjust sweetness by adding up to the remaining honey or maple syrup as preferred. Divide into two bowls: one left plain and one mixed with the 2 cups vanilla yogurt to offer two base options.

Prepare whipped topping (optional)

If using whipped cream, lightly whip to soft peaks and fold in 1 tbsp honey or 1 tsp vanilla if desired. Keep chilled until service.

Prepare fresh fruit

Hull and quarter strawberries, rinse and drain blueberries and raspberries, peel and dice mango, and slice bananas just before serving to prevent browning. Place each fruit in separate serving bowls or trays for the parfait bar.

In a small saucepan, combine 2 cups mixed berries (use a mix of strawberries, raspberries, and blueberries), 2 tbsp sugar or honey, and 1 tbsp lemon juice. Prepare granola and chia pudding

If your granola is store-bought it can be served as-is; for extra freshness, gently warm in the oven 3–5 minutes. Prepare chia seed pudding ahead by mixing 1 cup chia seeds with 4 cups milk (or alternative) and 1/4 cup maple syrup; refrigerate at least 4 hours or overnight. Spoon chia pudding into a serving bowl just before the parfait bar opens.

Pour fruit coulis, caramel sauce, and chocolate sauce into small serving pitchers or squeeze bottles for easy portioning. Warm slightly if thick; keep at room temperature otherwise. Spoon nut butter into a bowl and thin with 1–2 tbsp warm water or oil if you want it drizzlable; transfer to a small squeeze bottle or bowl with a small spoon.

Place fresh mint leaves, lime wedges, and edible flowers in small bowls near the serving area. Position toothpicks/small spoons and small serving cups or mason jars for guests. Label bowls so guests can identify contents (e.g., 'Granola', 'Compote', 'Chocolate').

Set out all bowls and toppings buffet-style so guests can assemble their own parfaits. Provide clear serving cups (6–8 oz) or small mason jars. A suggested build: start with 2–3 tbsp yogurt, add 1–2 tbsp compote or fruit, sprinkle 1–2 tbsp granola, add a spoonful of chia pudding or nut butter, repeat layers to fill the cup, and finish with a drizzle of sauce, a dusting of toasted nuts or coconut, a few chocolate chips, and a mint leaf. Add banana slices just before finishing to prevent browning.
