Combine liquids

In a medium saucepan, combine 1 cup water and 1 cup milk. Bring to a gentle simmer over medium heat—do not let it boil vigorously to avoid scorching.

Add oats and salt

Stir in 1 cup rolled oats and 1 tsp salt into the simmering liquid. Reduce heat to medium-low so the mixture maintains a gentle simmer.

Cook

Cook, stirring occasionally, for 5–7 minutes until the oats are tender and have absorbed most of the liquid. For creamier oatmeal, cook an additional 1–2 minutes and stir vigorously toward the end to release starch.

Season

When the oats are nearly done, stir in 1 tbsp brown sugar (or maple syrup), 1 tsp vanilla extract, and 1 tsp ground cinnamon. Taste and adjust sweetness or cinnamon as desired.

Optional Mix-ins & Toppings

Add mix-ins

If using, stir in 1 tbsp chia seeds or flaxseed and 1 tsp butter right after removing the pot from heat to melt the butter and incorporate the seeds. If adding sliced banana or frozen berries to warm the fruit, fold them into the hot oatmeal now so they soften and warm through (about 1–2 minutes).

Serve and top

Spoon the oatmeal into a bowl and top with 2 tbsp chopped nuts and additional fresh berries if desired. Drizzle extra maple syrup if you want more sweetness.
