Pickled Jalapeños & Brine
Prepare jalapeños
Wash the jalapeños thoroughly. Trim the stem ends, then slice into 1/8–1/4-inch rounds. For less heat, remove seeds and membranes using a small spoon; for medium heat leave some seeds.
Smash garlic
Crush the garlic cloves lightly with the flat side of a knife and peel. You can leave them whole or slice thinly for more garlic flavor in the brine.
Make brine
In a small saucepan combine the distilled white vinegar, water, granulated sugar, and kosher salt. Add the crushed garlic, black peppercorns, dried oregano, and bay leaf. Bring the mixture to a gentle simmer over medium heat, stirring until the sugar and salt dissolve (about 2–3 minutes). Do not boil vigorously; a simmer is enough to bloom the aromatics.
Refrigerate
Once cooled, place the sealed jar in the refrigerator. The pickled jalapeños are ready to eat after 24 hours but taste best after 48 hours. They will keep refrigerated for up to 6–8 weeks.

Drain or serve directly from the jar. Use toothpicks to serve slices as an appetizer, sprinkle with chopped cilantro, and offer lime wedges on the side. Pickled jalapeños are also perfect on tacos, sandwiches, nachos, burgers, and salads.
Storage note
Always use a clean utensil to remove jalapeños from the jar to maximize shelf life. Keep refrigerated; consume within 6–8 weeks for best quality.
