Prepare chicken

Pat the chicken breasts dry with paper towels. If breasts are very thick (over 1 inch), butterfly them or pound to an even thickness about 3/4 inch for even cooking.

Mix marinade

In a medium bowl, whisk together olive oil, lemon juice, minced garlic, dried oregano, smoked paprika, salt, and black pepper until combined.

Marinate

Place chicken in a resealable plastic bag or shallow dish. Pour the marinade over the chicken, ensuring each piece is coated. Seal or cover and refrigerate for at least 30 minutes and up to 4 hours. If short on time, 15–20 minutes will still add flavor.

Preheat grill

Preheat an outdoor gas grill to medium-high (about 400–450°F / 200–230°C) with direct heat, or heat a grill pan over medium-high heat on the stove. Clean and oil the grates or brush the grill pan with 1 tbs neutral oil to prevent sticking.

Bring chicken to room temperature

Remove chicken from fridge 10–15 minutes before grilling to take the chill off for more even cooking.

Grill chicken

Place chicken breasts on the hot grill. Cook without moving for about 4–6 minutes per side, depending on thickness. Use tongs to flip once. Internal temperature should reach 165°F (74°C) when checked at the thickest part with an instant-read thermometer. If you prefer light char, cook closer to 6 minutes per side; for crisp grill marks and slightly drier texture, aim toward the longer end.

Rest and finish

Transfer cooked chicken to a plate and immediately top each breast with 1/2 tbs unsalted butter (optional) and tent loosely with foil. Let rest for 5 minutes so juices redistribute.

Slice or serve whole. Sprinkle chopped fresh parsley over the chicken and provide lemon wedges on the side to squeeze over before eating.
