Preheat and prep
Preheat oven to 350°F (175°C). Lightly grease a 6-cup standard muffin tin with butter or nonstick spray. If you prefer making sandwich-style muffins, split and toast English muffin halves now and set aside.
If your chicken sausage is raw, remove casings and crumble into a skillet. Cook over medium heat until browned and cooked through, about 6–8 minutes. Drain any excess fat. If using pre-cooked sausage, chop or crumble and warm briefly. Finely dice the onion and red bell pepper. If using spinach, cook and squeeze out moisture; chop coarsely.
Assemble filling
In a medium bowl combine the crumbled sausage, shredded cheddar, diced onion, diced red pepper and cooked spinach (if using). Stir to distribute evenly.
Divide this filling evenly among the 6 greased muffin cups, placing about 2–3 tablespoons of filling in each cup so the eggs have space to set around it.
Make egg custard and bake
Carefully pour the egg mixture over the filling in each muffin cup, filling to about 3/4 full (the custard will expand slightly as it bakes). If any shredded cheese remains, sprinkle a little on top of each cup.
Bake in the preheated 350°F (175°C) oven for 20–25 minutes, or until the egg muffins are set in the center and a toothpick inserted into the center comes out clean. If you prefer a lightly golden top, switch to broil for 1–2 minutes watching closely.
Remove from oven and allow muffins to cool in the tin for 5 minutes, then run a small knife around edges to loosen and transfer to a wire rack. Let rest 2–3 minutes before serving or assembling into sandwiches.
