Whisk custard

In a wide shallow bowl or baking dish large enough to hold a slice of bread flat, crack in 4 large eggs and whisk until uniform. Add 1 cup whole milk and 1/2 cup heavy cream (if using); whisk to combine. Whisk in 2 tablespoons granulated sugar, 1 teaspoon vanilla extract, 1 teaspoon ground cinnamon and a pinch of salt until sugar is dissolved and mixture is smooth.

Soak bread

Arrange 8 slices of thick-sliced bread in a single layer (work in batches if necessary). Submerge each slice in the custard for about 20–30 seconds per side, pressing gently so the custard soaks into the bread but the slices do not fall apart. Transfer soaked slices to a wire rack while you heat the pan; let excess drip off for 30 seconds before cooking.

Make swirl filling

In a small bowl combine 1/2 cup packed light brown sugar and 2 teaspoons ground cinnamon. Stir in 2 tablespoons melted unsalted butter until the mixture is cohesive and spreadable; add 1 teaspoon flour if you want slightly thicker texture to stay on the bread. Taste and adjust cinnamon or sugar if desired.

Apply swirl (two options)

Option A (swirled toast): For slices you can slice a pocket into the side or make a shallow cut across the middle and spread about 1 tablespoon of the cinnamon swirl mixture into the center of each soaked slice, then press closed. Option B (top swirl): Spread about 1 tablespoon of the mixture on the top surface of each soaked slice immediately before or right after placing in the pan so it caramelizes into a swirl. Either method gives a pronounced cinnamon ribbon.

Cook & Finish

Heat pan

Heat a large nonstick or cast-iron skillet over medium heat. Add 1 tablespoon butter and swirl to coat; when it foams and the water droplet sizzles, reduce heat slightly to medium-low to prevent burning.

Cook French toast

Place soaked and filled/spread bread slices in the skillet (work in batches so they are not crowded). Cook 3–4 minutes on the first side until golden brown and the cinnamon filling begins to caramelize; gently flip and cook another 2–3 minutes until the other side is golden and the center feels set but still tender. Add the remaining 1 tablespoon butter to the pan between batches.

Keep warm

If cooking multiple batches, keep finished slices on a baking sheet in a 200°F (95°C) oven to stay warm and slightly crisp while you finish remaining slices.

Serve

Arrange French toast on plates. Drizzle about 1/2 cup maple syrup across servings (about 2 tablespoons per slice as baseline) and dust lightly with 1 teaspoon powdered sugar if desired. Finish with a tiny pinch (about 1/4 teaspoon) sea salt over the syrup for contrast if you like. Serve immediately.
