Simmer then brown (best texture)
Place 8 brats in a large skillet or sauté pan in a single layer. Add 2 cups water or beer (enough to come up about 1/3 height of sausages). Bring to a gentle simmer over medium heat, cover and cook 8–10 minutes until internal temperature reaches 150°F (65°C). Remove cover and increase heat to medium-high. Add 2 tbs vegetable oil and brown the brats on all sides about 2–4 minutes, turning frequently, until nicely browned and cooked through (internal temp 160°F/71°C). Transfer to a plate and tent with foil to rest.
Caramelized Onions & Peppers
Heat 1 tbs olive oil in a large skillet over medium heat. Add 2 cups thinly sliced yellow onions and 1 cup sliced bell peppers. Sprinkle 1 tsp brown sugar (optional), 1/2 tsp kosher salt and 1/4 tsp black pepper over the vegetables. Cook, stirring occasionally, 12–18 minutes until onions are deep golden and peppers are soft. If they start to stick, add 1–2 tbs water and scrape the browned bits. Taste and adjust seasoning. Keep warm.

Warm sauerkraut gently in a small saucepan over low heat for 5–7 minutes, stirring occasionally; drain excess liquid before serving. Place pickled jalapeños or sliced pickles, pickle relish and chopped parsley in bowls for guests to serve themselves.
Assembly & Serving
Set up your bratwurst bar: buns, brats, caramelized onions & peppers, warmed sauerkraut, mustards, ketchup, pickles/jalapeños, relish, cheese and garnishes. To assemble a classic brat: place a brat in a toasted bun, top with caramelized onions & peppers and a spoonful of coarse-grain mustard and sauerkraut. Offer alternate combos: cheddar + jalapeño for a spicy-cheesy brat, or Dijon + parsley for a brighter flavor. Provide tongs and spoons so guests can serve themselves.
Leftovers: Refrigerate brats in an airtight container up to 3–4 days; reheat gently in a skillet or oven. Sauerkraut and mustards keep longer stored separately.
