Method
Prep the asparagus
Trim and dry
Rinse the asparagus under cold water. Hold each spear near the base and bend gently until it snaps; discard woody ends and/or trim the tough 1–2 inches off. Pat the spears thoroughly dry with kitchen towels — dry asparagus browns better and allows the glaze to adhere.
Place asparagus on a rimmed baking sheet or in a large bowl. Drizzle with 1 tbsp olive oil, then sprinkle with 1 tsp kosher salt and 1 tsp freshly ground black pepper. Toss to coat evenly so each spear is lightly oiled and seasoned.
Cook the asparagus
Choose one cooking method: - Roasting (recommended): Preheat oven to 425°F (220°C). Arrange the asparagus in a single layer on a rimmed baking sheet. Roast for 10–12 minutes for medium-thick spears (8–14 minutes depending on thickness), turning once halfway, until tender-crisp and slightly browned. - Sautéing: Heat a large skillet over medium-high heat. Add a thin film of olive oil. Add asparagus in a single layer and cook, shaking the pan or turning occasionally, 6–8 minutes until bright green and tender-crisp with some char. - Grilling: Preheat grill to medium-high. Place spears perpendicular to grill grates or use a grill basket. Grill 4–7 minutes, turning, until charred and tender.
Remove asparagus from heat and transfer to a plate or tray while you make the glaze. Keep the oven on if roasting so glaze can be finished quickly and served hot.
Make the balsamic glaze
In a small saucepan, combine 1 cup balsamic vinegar, 1 tbsp brown sugar, and 1 tsp honey. Add 1 clove minced garlic and 1/4 tsp red pepper flakes. Stir to combine.
Place saucepan over medium heat and bring mixture to a gentle simmer. Reduce heat to maintain a low simmer and cook, stirring occasionally, until mixture reduces to a thick, syrupy consistency — about 10–15 minutes. The glaze should coat the back of a spoon and reduce to roughly 1/4–1/3 cup. Watch carefully to prevent burning.
Just before removing from heat, stir in 1 tsp unsalted butter to add shine and mellow acidity. Taste and adjust sweetness with a pinch more brown sugar or honey if desired. Remove and let cool for 1–2 minutes; it will thicken further as it cools.
Finish and serve
Arrange the cooked asparagus on a serving platter. Spoon or drizzle the warm balsamic glaze evenly over the spears. Use about 2–3 tbsp glaze for 1 lb asparagus; reserve any extra glaze for passing.
Sprinkle 1 tsp lemon zest over the asparagus to brighten flavors. If using, scatter 2 tbsp toasted sliced almonds and/or 2 tbsp freshly grated Parmesan on top. Add more freshly ground black pepper to taste.
Serve immediately while the asparagus is warm so the glaze is glossy. Leftover glaze can be refrigerated for up to 2 weeks; rewarm gently before using.
